Tamagawa sake is made at the Kinoshita family brewery, on the same site since 1842. This sake is brewed by Philip Harper, who is originally from Great Britain and the first non-Japanese toji (brewmaster) in Japan. He began serving as brewmaster about two decades ago, when the brewery’s owner recruited him.
Much of Tamagawa’s sake is made via spontaneous fermentation, and “Heart of Oak” is Harper’s signature junmai. This bottling was brewed in 2018 and made to develop over time in the bottle. Nutty and toasty, with wild berry notes, its savory character pairs well with richer dishes, including stews and roasted meats. SMV: +4.4.
